POACHED EGGS WITH MAPLE BACON AND PARMESAN TOASTS

Ingredients
12 rashers bacon, rind removed
1/4 cup (60ml) maple syrup
8 long slices baguette
1/2 cup (40g) finely grated parmesan
1 tbsp white vinegar
4 eggs
100g baby spinach leaves, to serve

Method
1. Preheat oven to 160C. Brush the bacon with the maple syrup and place on baking trays lined with non-stick baking paper. Cook for 15 minutes or until golden. Set aside and keep warm.

2. Place the baguette slices on a baking tray, top with the parmesan and place under a preheated hot grill for 23 minutes or until golden.

3. Heat a few centimetres of water in a deep frying pan over low heat until just simmering. Add the vinegar and use a wooden spoon to create a whirlpool. Crack each egg into a bowl and slip into the water. Poach the eggs for 3-4 minutes, remove with a slotted spoon and drain well.

4. Serve eggs with the crispy maple bacon, parmesan toasts and baby spinach leaves. Serves 4.

    I’m loving this recipe, Kim. A friend sent me a photo of a ‘Sunday Morning Breakfast Board’ she had at a place in Sydney. It had what they call ‘candied bacon’ and I think I now know how to make it ! But I’m guessing the eggs are poached for 3-4 minutes, not 34 minutes ? In any case, it looks delicious and I only wish it was breakfast time !
