SPAGHETTI WITH GREEN BEANS, RADISHES AND SALMON

This Italian recipe is The Milk Moustache’s Lauren Fitzpatrick’s favourite pasta dish. It’s delicious and quick, and always hits the spot!


Ingredients
350g spaghetti
150g green beans (trimmed and sliced)
60g butter
250g smoked salmon (coarsely torn)
4-6 red radishes (thinly sliced)
3 tbsp verjuice (or white wine)
200mL pouring cream
salt and pepper
1/4 cup chervil leave
1/4 cup chives (snippped)

Method
1.
Cook spaghetti in plenty of lightly salted boiling water, stirring occasionally, until al dente. Drain.

2. Cook green beans in lightly salted boiling water for 3 minutes. Drain and refresh under cold water; then drain again.

3. Melt butter in a large frying pan over medium heat. Add smoked salmon, red radishes and beans, and toss to combine.

4. Add verjuice and cook for 1-2 minutes. Then stir in pouring cream, and salt and pepper, until heated through.

5. Add pasta and stir until coated. Serve scattered with chervil leaves and chives.
